 Rainy Saturdays are made for cookies.

I'm setting you up with my favourite recipe .... dont'cha be blaming me when you eat the whole batch!

Oh-so soft Chocolate Chip Cookies

1/2 cup margarine
1 cup sugar
1 Tbs maple syrup (or other syrup)
1 Tbs molasses (the secret's ALL in the molasses, baby...)
Ener-G Egg Sub for 1 egg, prepared
1 tsp vanilla
1  3/4 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup chocolate chips

1/4 cup finely chopped walnuts (optional)

Preheat oven to 350 F.

In large bowl, beat together the margarine, sugar, syrup, and molasses.  Add egg sub and vanilla, and mix until smooth.

In a second bowl, combine flour, salt, and baking powder.  

Gradually add flour mixture to margarine mixture;  stir in chocolate chips and walnuts (if using)

Spoon dough onto prepared cookie sheets, and flatten slightly with the back of the spoon.

Bake 8 - 10 minutes, or until edges begin to turn golden.

Cool on pans for a couple of minutes, then move over to cooling racks.  (They will seem VERY VERY soft when they first come from the oven.  Don't fret - - this is how they are supposed to be.  They will firm up as they cool)


Lower-Fat Version:
Substitute applesauce for half the margarine.

Hmmmmm.... has anyone had experience, either first-hand or second-hand (i.e. viewing) the new "Sponsored" account LJ? 

I'm tempted to try it out, as I cannot justify a paid account, but *lust* over some of the features.  I just don't want everyone to be bombarded by pop-up's or other nasties.

Tues - Quinoa & baked marinate tempeh salad (held over from last week... didn't get to the HFS for tempeh and NOT trusting the grocery store tempeh again)

Wed - yummy lentil burgers & salad

Thurs - tofu "fish" sticks & home fries

Fri - As-you-Please grain & bean salad

Sat - Falafel with tomato salad

Sun - free-for-all / out
